What could be better than crisp, fresh organic garlic from your own garden? That’s exactly the right question. There’s a world of difference between garlic from the supermarket and garlic that you’ve planted yourself, grown with care and harvested fresh. Vallelado is a mildly spicy white garlic with thick, easy-to-peel cloves. Full of flavour. Fresh from your own garden.
A hardneck garlic
Vallelado is a hardneck garlic – a variety recognisable by the sturdy central stem that runs through the bulb. During growth, this stem forms a graceful curl at the top, known as the scape. You can cut these scapes before harvest: they have a mild garlic flavour and are delicious in a stir-fry or on the barbecue. A nice bonus from an already productive crop. Hardneck garlic generally has fewer, but larger and easier-to-peel cloves than softneck varieties.
Planting and harvesting
Plant the separated cloves between October and December, about 5 cm deep and 15 cm apart, with the tip facing upwards. Choose a sunny spot with well-drained soil. The garlic grows steadily throughout the winter and is ready to harvest in June or July, when the foliage begins to turn yellow and fall over. After harvesting, leave the bulbs to dry for a few weeks in a well-ventilated, dry place before storing them.
